醸造方法：海抜400から700mの畑、10月の初旬から上旬にかけて収穫します。3ヵ月ステンレスタンクで熟成、最低1カ月瓶内熟成を行います。

12月~1月まで放置し、不純物を取り除き、上質なマストにします。設定した温度と圧力になるまでの1ヶ月〜2ヶ月の間、タンクの中で二次発酵。
